This makes about 10 cookies. I recommend doubling the recipe because they are so yummy! You will also need a cookie scoop for this recipe if you have one or you can also roll them into balls or flatten them if you prefer a regular shaped cookie. Or you can try all styles! Either way you can't go wrong! Let me know what you think of this cookie recipe we sure do love these as a family!
Ingredients:
1 cup almond flour
2-4 tbsp Organic Cacao Nibs
1 and a 1/12 tbsp coconut palm sugar
1/4 tsp salt himalayan salt
1/8 tsp baking soda
2 tbsp coconut oil
1 tsp vanilla extract
3 tsp milk of choice
Directions:
Preheat oven to 325 F.
In a medium sized bowl stir your dry ingredients together.
Then you can add your wet ingredients to form a dough. Shape into your preferred shape cookies. I use a cookie scoop to form the balls and scoop it onto the greased baking sheet. Note: After adding your wet ingredients I stir then I use my hands to form the consistency into a dough (It helps tremendously to get that shape). If you are using a cookie scooper you may need to pack the dough tightly in each scoop because the almond flour gives it a different texter than regular flour.
Once all formed cookies are lined up evenly on baking sheet bake on the center rack for 12 minutes. Let it cool an additional 5-10 minutes before handling because they are very delicate at first but firm up once completely cooled off.
ENJOY! I hope you love these cookies as much as we do they are a real winner in our house!
