INGREDIENTS:
2 lbs. of chicken you can also add chicken wings!
Himalayan Salt and Black Pepper
2 tbsp of kerrygold butter
1⁄3 cup of Pesto (I use Kirklands Basil Pesto from Costco)
1¼ cups heavy whipping cream
Desired amount of Kalamata Olives
1 cup of feta cheese
1 garlic clove minced
12 oz. of Spinach
DIRECTIONS:
Preheat the oven to 400°F
Cut the chicken into bite-sized pieces. Season with salt, pepper, and garlic powder.
Add kerrygold butter and minced garlic to a large skillet and fry the chicken pieces in batches over medium-high heat until golden brown.
Combine pesto, heavy cream, feta, olives, and spinach in a separate pan and let it simmer.
Once chicken is golden brown you can transfer the chicken to your pesto/cream/olive/feta mixture and stir.
Let it simmer for a little bit longer and it will be ready to serve!
